Marinade for Lamb Marinade for Steak Makes two cups ½ cup extra virgin olive oil ½ cup lemon juice ¼ cup honey 4 cloves garlic, minced ½ small onion, minced ¼ cup minced mint leaves ¼ cup minced parsley leaves 1 teaspoon minced rosemary leaves 1 teaspoon minced oregano leaves ground black pepper salt In non-reactive bowl, combine the olive oil, lemon juice, honey, garlic, onion, mint, parsley, rosemary, and oregano. Add the lamb and toss to coat well. Marinate in refrigerator at least 4 hours. 12 large garlic cloves 4 five-inch rosemary sprigs or 2 tablespoons dried 16 thyme sprigs or 1 ½ tablespoons dried 1 tablespoon cracked pepper Extra virgin olive oil Salt Smash the garlic cloves with a heavy knife. Crush and tear the rosemary and thyme sprigs to release their perfume. Toss the steaks with the thyme, rosemary, garlic, cracked pepper, and enough olive oil to coat all its surfaces.
